Ratatouille, Three Bean Chili, and Sweet Potato Hash with Eggs

The second week of my Six Weeks using the UltraMind Solution has seen me tempted a few time.  Mainly it is bread and crackers and not double whoppers that I am thinking about. But, as with most things, out of sight and out of mind works for me.  And there is a lot of gluten free stuff out there.  The recipes are all pretty amazing as well.

My favorite dish so far is the Three Bean Chili, which is very good and keeps well in the fridge while I am traveling.  Finding those flax crackers at one of my cheapie food stores helped.  Mary’s Gone Crackers cost 50 cents instead of four dollars.  Hey, just because I’m eating better and working out more doesn’t mean I’m not still a cheap skate.

My favorite breakfast so far is the Sweet Potato Hash with Eggs.  The eggs are free range Omega-3 brown eggs.  I like them, though I’ll be honest and say I am not tasting a lot of difference between them and the normal evil corporate eggs.

The Ratatouille is good, but the serving sizes are a little small compared to most of the other dishes.  I am having  a hard time sticking to just the suggested menus.  I can handle the lack of caffeine, dairy, and wheat-but the lack of food, well, I am not so hot on that.   At 6 foot, 4 inches I tend to eat a bit more than your average person.  The Wife is often surprised that I am still hungry when she has eaten her fill.  So I am supplementing the program with a bit of fresh fruit and veggies, such as grapes, carrots, and a bit of guacamole once in a while.

The recipes in the UltraMind Solution companion guide are good, and they are for things I don’t often eat.  I am not huge fan of Indian food, and yet I really liked the Moroccan Chicken with Cauliflower and Cashews, which has a decided Indian feel to it.  I am not having a lot of luck with the grains Amaranth and Quinoa.  They are very fine grains and they need to raised before you cook them, so far I have not found joy with these.

The diet is also designed to remove highly processed and high-sugar foods, which is why there is all the focus on organics and whole foods.  There are snacks as well as meals and I am trying to stick to the basic plan.

Do I feel better?  Too soon to say really.  But I have lost about five pounds.
